YRUU Bake Sale

Enjoy bakery items and help UUCW’s HS youth group reduce the cost of their upcoming Summer ’25 Service Trip. This trip is a valuable opportunity for our youth to engage in meaningful work and broaden their horizons. The YRUU group will be back on March 30th with additional yummy treats.

Don’t miss YRUU leader Bree Chamberlain’s Black Bean Brownies – a favorite of UUCW. Get some on Sunday or bake your own.

Bree’s Black Bean Brownies
1 can (1.5 cups) black beans, rinsed well
2T cacao powder
1/2 c rolled oats (I use gluten-free oats)
1/4 t salt
1/3 c pure maple syrup
1/4 c unrefined coconut oil
2 t vanilla extract
1/2 t baking powder
1/3 c chocolate chips (I use Enjoy Life)

Preheat oven to 350.  Grease an 8×8 pan with coconut oil.

Combine all ingredients in a food processor and blend until completely smooth.  Scrape sides and blend again.

Dump into your baking pan and flatten out the top.

Cook 18 minutes.  Test with a toothpick.  If too fudgy, cook 2 minutes longer (but these are vegan and fudgy is nice!).

The recipe easily doubles but cooks for roughly 22-24 minutes.

Note: I use unrefined coconut oil because it gives a sweet flavor to the brownies. This has let me reduce the sugar content of the original recipe by half. Let me know if you get different results!
